for the love of fall ~ apple butternut squash soup


i love love love this time of year.  out of all the seasons, fall is by far my favourite.  the changing colours, the cool weather, cozy fall clothes, pumpkin spice lattes and comfort food.  i look forward it all year.

this weekend, among the chaos that is now our house, i found some time to make one of my favourite soups.  apple butternut squash soup.  it just screams fall.  i think i make around this time every year.    super easy to make and doesn't take a ton of time.  excellent news because time is something that is in short supply these days.  saturday was a perfect day to make this recipe.  the air was crisp and cool and comfort food was a requirement.



recipe:

1 med. butternut squash, peeled, seeded and diced coarsely
2 cups apples, peeled, cored and diced
1 cup onion, chopped
3 cups chicken broth
1/2 cup of half and half, i use homo milk instead
4 tbsp. butter
1/4 cup flour
1 tbsp. curry powder (i find a really generous tbsp. is best)
salt and pepper to taste

~ melt butter in soup pot.  add squash, onion, apples, and curry.  saute for five minutes with frequent stirring.
~ add flour and mix well.  cook, with constant stirring for two minutes.
~ add chicken broth and mix well.
~ cover and simmer over low heat for 30 minutes with occasional stirring
~ puree soup and add half and half.
~ bring soup to serving temperature and add salt and pepper to taste.

enjoy with a grilled cheese sandwich and a glass of wine!
