phantom muffins

it's been a good long while since a good eats post has appeared here.  i took yesterday off for liam's vaccinations, so we decided to make some muffins too.  phantom rhubarb muffins.  this recipe is by far the husband's favourite!  mine too.  i harvested a bunch of our rhubarb at the end of last summer and it seems like the bag is endless.  i keep using it and it just doesn't seem to disappear.  it's kind of nice though ... get a small taste of summer fruit in the dead of winter.  liam was a great muffin helper too.  he got the bowl for some mixing and decided that was pretty hard work.  so hard that he put his head down on the floor.  a pretty good indication of nap time.   he got up later and we had us some snuggle time.  then went downstairs to make a couple of these freshly baked, still warm, delicious muffins disappear.  no wonder they're called phantom muffins.

what do you mean they're gone? ~ again?

for muffins:

1/2 cup fat-free sour cream
1/4 cup vegetable oil
1 large egg
1 1/3 cup flour
1 cup diced rhubarb (we like our chunky)
2/3 cup brown sugar
1/2 tsp baking soda
1/4 tsp salt

for topping:

1/4 cup brown sugar
1/4 chopped pecans
1/2 tsp cinnamon
2 tsp melted butter

to make muffins:

~ blend sour cream, oil and egg, set aside
~ in another bowl, stir remaining muffin ingredients together
~ combine with sour cream mixture, mix until just moistened
~ fill 12 large muffin cups 2/3 full
~ combine all topping ingredients and spoon onto each muffin
~ bake at 350ยบ F for 25-30 minutes
~ enjoy with your little man

on sharing

so i thought i would share and explain why i posted about my pregnancy and haven't written anything since.  it's not that i'm not excited about this baby or that i don't want to share.  it's just the last two weeks have brought us a few scares.  i have been contemplating whether i should write about it or not and came to the conclusion that i should. 

i'm 11 weeks pregnant this week ... i know i shared early, but things were all on the up and up and i was excited to share the news.  about a week and a half ago some things started to happen that weren't "normal" and we i got freaked out.  my pregnancy was completely uncomplicated with liam, until 37 weeks.  my blood pressure skyrocketed and i was threatened with induction.  luckily liam heard that and decided to come out all on his own.  but other than that there was nothing out of the ordinary.  this pregnancy on the other hand has been all kinds of different.  firstly i am so so so sick.  at first it was an all day thing and now it seems that once 5 pm hits i'm nauseous and food is the most revolting thing ever.  i've been throwing up consistently at night for the last 3 weeks.  yuck, so done with this.  but this has been the scary thing.  i started to have some cramping one night that wouldn't let up.  not alarming on its own.  however it was coupled with spotting too.  freaked out and crying (i'm an emotional basket case too) i called my midwife.  she managed to calm me down but was also concerned and sent me for a bunch of tests the next day to check things out. 

it turns out that both the bleeding and cramping were (most likely) the result of a uti.  i've been lucky enough to never experience one of these lovely things until now.  i'm happy to report that as of right now the br-ister appears to be just fine.  the size of a lime already!  and i appear to be all good as well.  lots of fluids, rest and cranberry juice.  there has been zero cramping and zero spotting for almost an entire week.  i'm going to wait to post any belly shots until i hit 12 weeks.  just to be on the safe side.  my midwife is confident that baby is here to stay, and so are we. 

on a sort of related topic, i've been having the strangest dreams lately.  one of which was about our baby girl.  yup, i had a baby girl dream.  maybe that's a sign?  maybe that's just wishful thinking?  honestly i'm just excited that we're adding to our family.  girl or boy.

our weekend via iphone

its sad that weekends go by so darn fast! i feel like we've just settled in and here we are at almost monday again. our weekend was pretty laid back. saturday morning brought lattes, the best ever chocolate croissants, and good conversation with friends at borgo. then it was off to get some new kicks for liam. poor kids feet were being neglected. he's super stylin' now ... just like daddy.  we still had time for a long afternoon nap and park time fun!



sunday morning was nice and lazy.  thank goodness 'cuz the br-ister is causing my tummy a lot of grief these days.  my nights are filled with nausea and trips to the bathrooms.  the husband is amazing and has taken on the super dad role the past few weeks.  i can't wait for this to let up and things can feel "normal".  oh yeah.  and we took liam to the science centre.  he had a blast.  and so did we.  there's some really cool s**t to do there!
